mason jar mud pies



I made this delicious treat for Father's Day and I've decided that an appropriate amount of time has passed for me to indulge in these again...because although they are amazing, they aren't fat-free!

 
They are fairly easy to prepare. You need to do a bit of prep and make the Chocolate Mousse and boxed brownies ahead of time. (Chocolate Mousse recipe below). Once you have all the ingredients ready to go it is just a matter of layering them in the jar for optimal yumminess. I cut the brownies with a circle cookie cutter so they would fit in the jar, but you could also just add them in small pieces.
 

 Because these are so rich, you may have a few leftovers. I said MAY! If that is the case, simply add a lid, put your guest's name on them and stick them in the fridge until your guests are ready to leave.
 
Chocolate Mousse
(from the back of a Knox Gelatin box)
 
1 envelope Knox Gelatin
1/4 c cold water
 2T butter or margarine softened
1-1/4c milk
1/2 c sugar
1/3 c unsweetened cocoa powder
1 t vanilla extract
1-1/2 c frozen whipped topping, thawed
 
In small saucepan, sprinkle gelatin over cold water; let stand 1 minute. Stir over low heat until gelatin is completely dissolved. Stir in butter until melted.
In blender, process milk, sugar, cocoa powder and vanilla until blended. While processing, gradually add gelatin mixture and process until blended. Pour into a bowl, then blend in whipped topping. Chill until firm.
