Soup Swap



Last weekend my friend Nikole had a soup swap. We all made 6 quarts of soup and then traded them. It's so fun to look in your freezer and see them all waiting for you. As promised for you soup swap ladies, here is the recipe for my Veggie Chili. {And thanks for letting me steal the picture off your blog Nikole even though I didn't ask :) }
Veggie Chili {it's spicy}
4 zucchini, chopped 1 tsp ground cumin
2 medium onions, chopped 1 tsp salt
1 green pepper,chopped 1 Tbsp sugar
1 sweet red pepper,chopped 2 Tbsp chilli powder
4 garlic cloves,minced 1/4 c each fresh minced cilantro & parsley
1/4 c olive oil 1 jalapeno, seeded & chopped (1 use 1/2)
2 cans (28 oz each) italian stewed tomatoes
1 can (15 oz) tomoato sauce
1 can (15oz) pinto beans,drained
1 can (15 oz) black beans,drained
1 can (15 oz) kidney beans, drained
Saute zucchini, onions, peppers, and garlic in oil until tender. Stir in the tomatoes, tomato sauce, beans,jalapeno and the seasonings. Bring to a boil over med heat. Reuce heat, cover and simer for 30 minutes, stirring occasionaly.

Yum, sounds so fun. I love soup especially when it is so crummy outside. Did you get all your sewing done?

You can steal my photos anytime. I didn't remember that your chili had beans...so now I am excited to eat it! It sounds so yummy.
